Decadent Moist Chocolate Cake

Ingredients:
2 cups flour
¾ cups cocoa powder
1 ½ tsp baking powder
2 tsp baking soda
pinch of salt
1 cup milk
1 tsp vanilla essence
2 cups sugar
½ cup oil
1 cup boiling water or hot coffee
2 eggs
Plain chocolate slab
1 punnet of strawberries
1 kit-kat chocolate
1 punnet of strawberries
Method:
  1. Preheat the oven to 180°C. Line two 23cm round cake pans, or one 23x33cm rectangular baking pan, with wax paper. Grease the paper and the sides of the pan well.
  2. In a large bowl, sift the dry ingredients together.
  3. Add the eggs, milk, oil and vanilla essence and beat with an electric mixer for about two minutes. Add the boiling water or coffee and mix until combined.
  4. Pour the batter evenly into the prepared pans and bake for 30-40 minutes.
  5. To test if the cake is ready, insert a toothpick into the middle of the pan. If it comes out clean, the cake is ready. A single rectangular cake will take slightly longer to bake than two round layers.
  6. Slide a knife around the edge of each cake to loosen it from the pan, turn the pan over onto a metal rack and peel off the paper.
  7. Let the cake cool completely before covering with melted cadbury chocolate, kit-kat chocolate fingers, strawberries and flake.

Delicious Lamb Knuckle Curry

Ingredients
Lamb Knuckles (1kg)
Onion
Greenpepper
Tomoto
Ginger and garlic
1tsp Raja hot curry powder
1tsp Paco curry powder
1tsp koljana
1tsp barishap
1tsp jeera
1tsp garam masala
2tsp tumeric
1tsp leaf masala
1tbsp sugar
2tsp salt
5 medium size potatoes
fresh coriander

Method
Braise onions greenpepper and tomoto. Add sugar, salt, spice and garlic and ginger. Add lamb and simmer for approximately 35-45 min. Add potatoes and cook for a further 20 min till cooked and lastly add chopped corriander for 5 min. Serve with roti or basmati rice.

Sea Food Starter

Ingredients
Seafood Mix
Onion
Greenpepper
Halved Cherry tomotoes
Shredded lettuce
Diced cucumber
Sliced celery stalks
Coriander/Danhia
Whole kernals
Mayonaise

Method
Steam seafood mix and salt. Mix all the above ingredients together. Add white pepper, black grind pepper and mayonaise.

Strawberry Fridge Tart

Ingredients
1 litre strawberry yoghurt
1 tin condense milk
1 fresh cream
1 pkt of strawberry jelly
2 pkts of tennis biscuits
1 punnet fresh strawberries
1 flake chocolate
Method
Mix yoghurt, condense milk, strawberry jelly (mixed as per instructions) and fresh cream together. Layer mixture in a rectangle or square bowl with biscuits as the base and end with mixture on top. Decorate with fresh halved strawberries and flake. Chill overnight and enjoy!
